I have been told, that Finnland doesn't have a lot of traditional food, but one of them is Lohikeitto, the salmon soup. I am personally not a very big salmon fan, but i thought when in Finland I have to at least try the soup. But because Finnland is very expensive, Steffi and I decided to try to cook the soup on our own at home. In that way we can safe some money and if I didn't like the soup, Steffi could just safe it for later. So we looked for a recipe online and found some really good ones, but in the end we decided to just loosely follow the ingredients and came up with a recipe which was more student friendly and easier to make. Also, we left the dill out completely, because Steffi is not a very big fan. Our recipe was as following:
- 3 potatoes
- 1 carrot
- 1 onion
- vegetable stew
- 400 g salmon
- Parmesan cheese
- and herbs and a bit lemon juice
First we cut the onion, potatoes and carrot into squares and put them into the pot with some oil to sear, then we filled it up with water an put the vegetable stew inside. After letting this cook on low heat for 10 min we put the salmon, Parmesan cheese and the herbs in, we had a herbs salt which is from Austria because we did not find any in Finland, but you can just put the herbs in which you like. In the end we put in some lemon juice and then we cooked it up one more time and after let it sit for about 20 min.
Let me just say, it was delicious... and I don't even like salmon!
